I've been working full-time at a University for three years since completing my undergraduate degree in a field unrelated to occupational therapy. Do you think programs will take this into consideration since I had to complete two years of prerequisites while working full-time? It definitely hasn't been easy, but I worry that because my current position is unrelated to occupational therapy schools it won't really matter.
 
I would put it on your application. I was a hairstylist and worked at the same place for 5 years, including full time while in school. I even had the owner write a letter of recommendation for me. I talked about working with lots of different populations which I think helped.

You can always turn your experiences into something that would be unique and useful on your OT apps. Also, turning in a resume or typing in your work experience is usually required for most apps.

I was a personal trainer and personal training manager for 7 years. I wrote about changing clients' lives for my personal statement and wrote about being a manager and leading the next generation of personal trainers for most supplemental essays.

Use what you got to your advantage! I think it will separate you from the waves of super high GPA new graduates of undergrad if they're inexperienced.
