I'm on track of getting 120+ credits by the end of my Fall 2015 semester (supposed to graduate Spring 2016).

Should I stay in school for Spring 2016 for some GPA boost? Although it will cost more is it worth that .3 GPA boost? (I was thinking against this but wanted to cover all my options).

I was thinking I'd graduate a semester early and take the spring semester to do something like substitute teach, NIH research or something that like, medical related work, relax.

If I end up not getting accepted my senior year then did I just screw myself by not getting that GPA boost, losing EC activities/clubs, etc?

**heading into my Junior year in the Fall semester. 100% dead set on getting 4.0's next year no question about it. have a bunch of my liberal arts classes left so it shouldnt be like my 4core science course semesters.

How are you going to go from something like a 3.6->3.9? Are you sure it's a .3 GPA boost and not a .03 GPA boost? Also, with 120+ credits, it seems impossible to go up .3 GPA unless you're at something like a 2.x or whatever. Unless I misread this, which I don't believe I did, I'm not sure how you're planning on doing this. Regardless, I've read nothing of the contrary to graduating a semester early. If you can, use the extra time to continue ECs. If you don't have stellar ECs, it might just be worth it to take things slowly.
