When I submitted my AMCAS, I had a publication that was accepted for publication but it just recently actually got published. Is this something that is worthy of an update to schools that I am sitting on the waitlist at?

Sorry, while this could be enough of a "reason" to send something, accepted vs published won't make a difference at this point (I think). Did you present these data recently at a conference? Are you now working towards another project?

I'm trying to get in a research internship position for this summer but I don't hear back from them till may. Other than that, there's not much else going on

I agree with kyamh. This is not worthy of an update. You already got equivalent glory associated with having a publication when you reported the accepted manuscript.
