I know the agreement includes doctors, but would it make it easier for me to do residency in France after doing med school at UdeM?

Absolutely. A good friend of mine finished at McGill and is training at Institut Curie at the fellowship level.
 
Did your friend find it difficult to study in English at McGill but work in French? Does McGill have any Medical French courses to assist graduates?

He is functionally bilingual (actually trilingual) but McGill allows you to take all exams in French and you are certainly encouraged to take French courses. I am not 100% sure but I believe that there is a course for medical French.

Although most of your patients in the hospitals will speak French, the vast majority are bilingual anyway.
