I will be walking into an interview Tuesday to my top school (Y). I am waiting for Oct 16 for the decision to school (X) and if offered acceptance I will have 3 weeks to make a decision.
I plan to accept the offer as a hold

But

Hypothetical Questions :
1) If I were to only be accepted by school X and decided to reject within the 3 weeks and before the May national deadline, if I decide to reapply will schools know of this acceptance?

2) Will schools see all acceptances regardless if I decided to reject School X?

Thank you.

Why would you turn away your only acceptance just to reapply? If you don't want to go to the school, then withdraw your application before 10/16. Otherwise schools will see that and it will paint a very very very poor picture of you as a reapplicant.

Also, the majority of matriculants have only one acceptance.

You can hold multiple acceptances dude. Worse case scenario is you get into school x, pay a $150 deposit and then later get into school y and don't get that money back. A lot of schools refund deposits also. It's not uncommon for an applicant to be sitting on a few "accepted" acceptances in the spring before making a decision and putting in the big deposit.

The OP isnt worried about his money. He wanted to reject an acceptance in the hope it wouldnt appear when he reapplies next cycle so he can reapply to his number 1 choice. And answer is NO! It is recorded when a school offers you an acceptance; your response to that acceptance is irrelevant to the recorded status

I see; I assumed finances were the issue. OP you'd be nuts to turn down an acceptance at this time! Getting in anywhere is a huge accomplishment.
