Question about metaphor used in personal statement

Is it possible that adcoms would view my use of this metaphor as plagiarism?
Nah.

Cliches in general need not be empty phrases if used with discretion. Consider this: if you were to remove the cliche from the sentence it's in, would the sentence lose any meaning?
 
Metaphors are a pain in the ass and should be thrown out the window, especially if they're mixed

"My love for medicine shines brightly like the sun, basking even the darkest depths of a cosmic soul in the welcoming rays of compassion....as Our Lord once asked a rib of Adam to create immaculate Eve, I lend my life and virtue to the benefit of those less fortunate (see Activities 1-15, marked 'Most Meaningful')."
