When evaluating new schools that have yet to produce step scores/ match lists, can any conclusions be drawn from looking at median mcat on msar? Like for example, "wow, X Medical School has a median matriculant mcat of 515, they are getting great students and I bet they will do well on exams and match well". I understand that mcat is not highly correlated with those things, but I guess my question is should it be taken into account at all?

No. The effect of the curriculum, which determines pre-clinical GPA, will be vastly more important.
