As Catalystik suggested, I found a family doctor to shadow. However, due to my other volunteering activities and MCAT course, I have two options.

1. Shadow few doctors with more time
2. Shadow many doctors with less time [2days per doctor]

Any thoughts will be very helpful.

Quality is better than quantity.
#1 for sure!

Who says you have to choose? You can always shadow one or two doctors primarily, and then a few more once or twice.

For instance, I'm primarily shadowing a primary care doctor, but he got me an in with a cardiac surgeon and a radiologist, whom I will be shadowing for only a couple of days.
