Does anyone know generally how many interviews are offered per applicant? Obviously it will vary from school to school, but in the broadest context is there a trend?
 
I'm not sure exactly what you're asking...

Do you want to know how many interview invites the average applicant rakes in during a given cycle, or how many interview dates each school gives applicants to choose from?

In either case, you really can't generalize. Many applicants are not invited to interview at all, and many applicants interview at 50%+ of their schools. As for the invites themselves, that also varies. Some schools give students have a dozen dates to choose from, while others offer only one.
 
Say a school gets 5000 applicants. How many applicants will be offered an interview?
 
you can find that information in the MSAR book but you should also be able to find it on-line. Trying looking a little harder. I'm confused by your question as well. It pretty clearly says that you want to know the average amount of interviews an applicant will get during one cycle.
