So...lets say after your junior year you apply with a 3.4 and dont get in, then you get a 4.0 your senior year for a cumulative gpa of 3.55. Will this mean you'll have to take POST bac classes while you wait for the word on your acceptance? So essentially your gpa is only based on 3 years worth of work and not 4?

You can just sit around at home and do nothing while you wait. You aren't required to take post bac classes. It's not a prerequisite for dental school.

huh? Your GPA is based on all the undergraduate classes you have ever taken.
