For a student that never really understood the concepts in the pre-req classes and just kind of did the bare minimum to get an average grade, what strategy would you recommend to prepare for the MCAT? In other words, what books should I start with first? (TBR, EK series, Kaplan, Princeton, Barrons, etc.)

I am looking for a book that can sort of "re-teach" me the material MCAT-style without me having to re-read my textbooks for all the pre-req classes...
 
On this site you will find quite the range of preferences regarding MCAT prep materials. TBR is extremely detailed. EK is much less detailed, and Kaplan is somewhat intermediate. This is based on my experiences, along with the experiences of some close friends. I do not have a history with Princeton or Barron's, so I cannot speak on behalf of them.

Personally, I thought Kaplan did a fantastic job demonstrating the concepts, and they have a copious amount of online questions to help you practice. TBR, while extremely detailed, gives very good, very long practice passages at the end of each chapter that helps you get acquainted with MCAT-style passages and concepts, but especially concepts.

These are my two cents, and should be taken with a nice grain of sodium chloride.
