Really weak ECs, want to improve resume.

Ok, so I am about to start my junior year and after looking over my resume, nothing is particularly impressive. My GPA is a 4.0, both science and cumulative and my MCAT is scheduled for August. I got a 27 on my first diagnostic, and jumped to a 29 in 2 weeks, so I'm hoping I can score in the low 30s, if not higher. The rest of my application will be really weak if I leave it as is.

I've been a member of a premed club for my freshmen year, but didn't join it last year. I also did research in the Fall of 2010, but I couldn't continue in spring 2011 because new students were coming into the lab class, and it would be hard for me to continue my research since I was a volunteer in the lab while the class was filled with new students. I guess my only redeeming parts are that I have been a member of my school's Muslim Student Association for 2 years and plan on staying in it until I graduate, and that I've had about 50 hours of shadowing experience with an Anesthesiologist that worked in an ICU. I don't know if hobbies are included on applications, but I play trombone for fun and had a few gigs in high school, but I haven't played for the public since college. I also do photography for fun and I'm going to enter a few low key contests here and there because I enjoy taking pictures. I know I need more clinical experience and I plan on trying to volunteer a couple hours a week this upcoming year at a hospital near campus, but what else can I do to make my application look better?
