For reapplying to school this cycle after applying last, do I need ALL new letters of recommendation? I have one new one from a science professor already. Do I need the professors to update the letters in any way or can I have them sent again?

The professors have to update the dates on the LORs, and it has also been highly recommended by admissions panels that each LORs comes with some update as to what you've been up to in the last year.

Yes, every letter needs to be updated with a new date + content (how you've improved your application, new work experience, etc).
