Your chances for interviews are limited since you have no non clinical volunteering, only 20 hours of shadowing and no clinical exposure other than research. In the coming year you should accumulate 150+ hours of non clinical volunteering such as food bank, homeless shelter, etc. as well as another 30 hours of physician shadowing (including primary care). You should also accumulate 150+ hours of clinical volunteering/employment with patient contact (not research). You will need those hours in case you reapply.

I’ve been considering doing more volunteering on weekends or at the end of the day, but I’m worried that if I start doing that now wouldn’t it look like I’m just checking off a box? I don’t have much for community service unless you count being a transfer student mentor. I also volunteered at a neurotrauma conference (same one that I presented at) where I helped neurotrauma survivors and other attendants navigate the conference, and helped conduct lectures (probably was around 20-25 Hours).
My shadowing was with my neurologist a few days during summer classes and research.

Also I decided not to apply to those schools since I really value doing clinical rotations in a relatively large city that could expose me to wider range medical conditions and patient populations (Yale & Brown is an exception to this due to their research), and research resources and opportunities. I also don't have a vehicle to go to some of their clinical rotations that are hours away.
