Does a week difference in an interview date make a difference in acceptance chances in rolling admissions? Or is it the interview invite in general that you're really competing for?

No to first question; Yes to 2nd.
Adcoms might not even meet on a weekly basis. Mine does every three weeks or so.

I guess I should have omitted the "rolling admissions" bit of my original post. My question mostly pertained to whether a week later interview date would make a difference which Goro answered.
