Does a week difference in an interview date make a difference in acceptance chances in rolling admissions? Or is it the interview invite in general that you're really competing for?

No to first question; Yes to 2nd.
Adcoms might not even meet on a weekly basis. Mine does every three weeks or so.

There is no functional difference between rolling and late notification schools.
In essence all schools are mostly rolling interview slots. Difference between via rolling or non-rolling notification is nearly trivial

I guess I should have omitted the "rolling admissions" bit of my original post. My question mostly pertained to whether a week later interview date would make a difference which Goro answered.
