I'm confused by the percentiles...what scores do you guys think are good for the GRE for vet schools? (I haven't even registered for it yet, I need to start working so I have money first!)
I hear it's set up more like the SAT, which I didn't take.
Just go on the AAVMC website and it has links to each school with their average GRE score or GRE requirements. That will give you an idea of what you are shooting for at the schools you are interested in.

Content-wise it is a lot like the SAT, with a harder verbal section. The math is nearly identical. The real difference, though, is in the computer performance based testing method. You'll need to research that on your own and take some computer practice tests.
You said you took stats, right? Your percentile rank represents the proportion of the test-taking population who scored lower than you on a given section, and is a more telling attribute than raw score. Since the math is pretty much high school level, the quantitative section percentiles are skewed. There is little room for error on that portion of the exam to be in a "competitive" (over 70th, loosely) percentile - I'll estimate a score of 700 or above. In contrast, on the verbal, into the mid-high 500's is still probably somewhere around 70th percentile. The AW is crap, that part sucks and I refuse to talk about it.
