So my desk is cluttered with old receipts, applications, papers, taxes and an assortment of misc. paperwork. I'm in the market for a scanner that is user friendly that will help me organize this stuff in a heart beat. Thanks.
 
scanners are so similiar now it doesn't matter for your purpose. get the cheapest on the market from a respectable brand. canon, epson, etc.

Sounds like you need a shredder. Maybe a filing cabinet for those taxes...or maybe just a filing cabinet for all of it.
 
Just to make it easier on yourself, get something with a feed scanner on it. For feed scanners, all you do is insert your documents onto the tray and it the scanner will take one page after the other and scan them until there are no documents on the tray.
Usually for printers and scanners, I look for HP.
 
It's more than you asked for, but I suggest you get an all-in-one machine. It's great having one piece of equipment that can print, fax, and scan. Get one with a document feeder and duplex printing and you'll be set. HP OfficeJets are pretty reliable.
