You can always call and ask to change it, they will usually work with you if you have an actual conflict. My friend applied to LECOM and they switched it because he had a wedding to go to that day.
I would try your hardest to make it to the assigned date though, unless you have a really legitimate excuse. I wouldn't count a missed class as a reason to move an interview though.
Temple. They gave me one day, which I already had an interview on. I called to change it, but they gave me a list of two days and I had to decide within 5 days. I withdrew.

Haha for some reason I found your situation with Temple funny. You were like 'pshh I'm too good for this' 🙂 where did you end up going?... And another school to add to the list that pick the date for you. University of Minnesota. What do I do if that is just not a convenient day? I was trying to schedule all of my interviews during October, but this one comes a few weeks earlier. Any suggestions?

Haha, yea. I was pissed. I had received my interview for Minnesota a few weeks earlier and I was more interested with them than Temple. That being said, they didn't give me any other options...
I had some inconvenient interviews, but you just have to suck it up sometimes. I was lucky and had extremely understanding professors and was allowed to make up exams, practicals, quizzes, labs whenever I needed. Just try to be nice and understanding that you may be causing an inconvenience for a lab course. I think if you offer a good solution when you ask your professors for make ups, they may be more understanding.
