In secondary essays, would it be ok to discuss my experience participating in an EC that I left off my primary application and cannot disclose the name of? Obviously I realize this is a bit odd, but not sure if it’s just quirky or a red flag to adcoms.

What precludes you from naming the EC? And by naming do you mean the entity you were involved with, the job title you held, or the activity itself? What precludes you from naming it? Did you sign a non-disclosure agreement with a government entity or a private individual or is there some other reason why it can't be named?

Can you say that you traveled around Venezuela speaking with local people and finding out more about their activities and concerns without saying that you were a CIA operative? And you never mentioned on the primary application that you spent a month in Venezuela? All cool. Sometimes interviewers will even ask something cool about you that isn't on your application (e.g. I'm a triplet, I won a state spelling bee in 8th grade, etc).
