You can hear back from the other schools too. If you decide to go to a different school after you deposited, all that happens is you lose the deposit you put down.

I paid a deposit on the first school that accepted me to secure my spot. I had no other II's until last week. Now I'll be attending interviews at my top two choices. If accepted, I'll have to forfeit most of my deposit to school #1, but I can still pick another school.

In other words, a deposit doesn't prevent you from choosing a different school.
