if i shadow two or three doctors for on average a month each, should i have a letter of rec from each to prove i shadowed each or would one letter suffice from one of the docs and should i just list the hours and dates for the other docs on the application/resume?

It would be rare for an MD school to require an MD letter (though some DO schools ask for and will accept MD or DO letters). But a premed committee might ask for one. You'd be fine getting one letter from whichever shadowing experience was the most substantive. Documentation of hours isn't needed, as the "honor system" is in force. Just accurately report your date span/hours on the application with the usual contact information, specialty, physician name for each.
