Should I consider re-taking my SATs?

It can matter; however, if you have a weak SAT score take the GRE. The GRE will be more relevant than taking an SAT after college.
 
I'd been considering the GRE. I wasn't prepared for the SAT and know I can do better (after all that was in 2003). Thanks for the advice, I'm going to look into it.
 
My two cents: I think people who have a point to make as far as standardized test scores generally take the GRE instead of retaking the SAT. Every postbacc program I applied to specifically asked about the SAT and the GRE. It makes much more sense to take the GRE to vindicate your SAT score. Retaking the SAT and doing better isn't the same, becasue the SAT tests students coming out of high school. The GRE is made for someone in your position who has college under their belt.

As for myself, I got a score very similar to yours on the SAT, but I submitted my LSAT score when applying to postbacc porgrams -- my LSAT was much higher than my SAT. Although they never asked for LSAT scores, I have a strong suspicion that helped my application a lot. So far, I've gotten into NYU and Columbia, and I have a couple of interviews forthcoming.

So, in short, I think it makes a lot of sense to take the GRE instead of the retaking the SAT.
 
One amendment to my response: Some programs don't ask for SAT's at all if you've been out of school for a few years. Bennington is an example. I know a few of the schools you have listed do request the SAT, as do a number of the other bigger programs (NYU, Columbia, etc.).
