Should the personal statement have all volunteer work I did? I'm planning on only mentioning the one volunteer program I did that made me want to be a doctor.

No. The personal statement is not a resume. It's supposed to answer the question, "why do you want to be a doctor?".

Go with your original plan and mention that one volunteer experience. Please don't use your PS as a regurgitation of your resume. You'll be shooting yourself in the foot.

Absolutely not. That's in the activities section of your application.

The personal statement should be..... a personal statement. Use it to talk about who you are, what motivates you, why you want to do medicine, etc.
