This may seem trivial, but in an email / portal text, would you address any application updates to particular person in Admissions, or just "Dear Admissions Committee?" Also is it correct to punctuate
M.D. when naming several people you have worked with, or simply MD?

In the portals, I just typed my updates without addressing them, but in an email, at the top of the doc I just put “below are a few updates I would like to bring to the attention of the admissions committee at ______ school”

I suggest sending to the Admissions Dean, and MD is OK
