SMP/post-bacc or Scribe

MCAT: 502, taking again

I really am interested in MD and know I need to take a gap year. I have a significant amount of research in the FSU COM, leadership experience, and volunteering. I am really torn about whether it would be better to do an SMP or post-bacc and raise my GPA, or to work as a scribe and gain more shadowing/clinical experience. My GPA has been on an upward trend since I had a rough start to college, and I've made deans list the last 3 semesters, and made straight A's in my last semester.
 
Both - scribe on weekends and study during the week (DIY post-bacc).

Retake the MCAT. Score 513+
Ace a year of DIY post-bac or SMP

Scribing isn't going to remediate a weak GPA or MCAT score. Since you already have good ECs, it's gilding the lily.
