So like, how does the whole water bottle thing work?

I read the AAMC essentials, but I'm still confused about the whole water bottle thing.

Do you bring a bag of your belongings with the water bottle/snacks to be stored in a locker, which can be accessed between breaks, or you can't bring water bottles at all in the testing center?

Also, can I use the bathroom during breaks?

And one last thing, how do I take breaks between sections? Will the computer ask me if I want to take a break, or do I just get up? Or what?

You store everything except your id in a locker. When a section ends the timer immediately starts and begins your ten minute break. You are free to get up and leave the testing area. They make you sign in and out each time you enter/leave the computer room. During the break you can use the bathroom and access your locker. Just make sure you're back before the break timer ends. The timer functions exactly like the aamc practice test breaks.
 
To add, if you return after the break timer runs out, your screen will sit and wait on the next "title" screen, where it will say "VERBAL REASONING" or whatever, and wait for you to click "next."

Does this title screen already have the VR time running or does it wait until I click next? Is there a threshold for how late you can be after your break?

The people at AAMC are very pragmatic. Some centers will have multiple rooms, and thus have lines waiting to check back in following the break. In theory someone could be back in line after seven minutes but take more than three minutes waiting to check back in. To alleviate this stress, the break timer may end at 10 minutes, but the next section does not automatically start. If you take a reasonable amount of time at break, then you have nothing to worry about. If you plan to order a pizza and sit down to do a crossword puzzle, then you probably need to scrap that idea.
