Hi

I finished freshman year as a psych major. Was considering premed, and now I'm pretty sure about it. my college works on the semester system

Sophomore yr I'll be taking intro bio, intro chem, some psych classes and some humanities.

Junior year I'll be taking ochem/orgo for sure (Why the West cost/East coast divide? Anybody know?)

Here's where I'm a bit confused. I'd rather not have a gap year unless I feel like I could pack in more research/volunteering/shadowing in there or if my MCAT scores are bad.

Around when should I take ochem and physics, start studying for MCAT, take the MCAT and apply for med school if I do not want a gap year?

You should shoot for a May MCAT date in your Junior year if you don't want to be having a gap year. Thus, you shoudl have your pre-reqs done by the end of your junior year.
 
If you want to avoid taking a gap year at all costs, you will have to take physics and orgo during your junior year. Also, don't forget about the math and english requirements. Then you can take the MCAT in may of your junior year. That way, your scores will be available so you can apply in june of the same summer.

However, you may not want to rush things. You can spend a gap year doing research, volunteering, or other ECs.
