NY lets you have in state tuition after a year if I'm not mistaken and NC is much tougher. Make sure in the apps to NY schools you mention the ties to the area. Could be worth calling them to find out what their requirements are for residency. They may choose to consider you in state if you meet the criteria even if your AMCAS residency is NC. This would be best case scenario, and this was based on my own experience having one foot in NC and the other in NY.
