Just in case anyone else is curious about such things...
Apparently when you take Step 2 CS, they provide you with a meal halfway through the test. Which is of course super-exciting (I love free food), unless your villi have some mysterious grudge against gluten. So I called the info line to see if they could tell me anything about what kind of food they usually have at the testing centers, and the lady basically said she couldn't be sure. They do always have a vegetarian option, and they used to have a kosher option as well, but I guess they don't necessarily guarantee that anymore.
So moral of the story is, if you disagree with any food, or any food disagrees with you, it's probably a good idea to bring your own lunch just in case.
