I'm no where near done with pre-reqs, but I was wondering if I could start an app in amcas? And update it as I went along? Does it show when it was created?

You could, but it resets every year so you'll lose everything.

Not exactly true. You can start one whenever you want. However, the make a new application each year so your info would not transfer over to the next application cycle. But if you want to check it out and see what it's like and what you'll have to write. Feel free to start one.
