When I say in my essays "I plan on doing this activity until I matriculate"
Does "until I matriculate" mean when I start school in August or does it mean when I am accepted?
I am hoping it's the former.

"Matriculate" means when you start school, not when you are accepted. Sorry to rain on your hope...
