So, I have completed all of the medical school prerequisite courses and have completed enough credits to graduate this quarter if I wanted. However, my undergrad offers a biotech program that is basically just a year long research year. I will be doing that because it really interests me along with random electives to maintain full time for Financial Aid. So, even though I have completed the core degree requirements and am only staying in school for the interim time to complete this biotech program, it is NOT a gap year because I will not technically have graduated yet, correct?

I ask because when secondaries ask "Are you taking a gap year" I feel like I should check the 'No' box. But then I don't get to tell them about what I am doing lol

No, you are still in school and will have courses listed on your application as being taken in the coming year.
Thank you for the confirmation. Just wanted to make sure I do not fill out those secondary questions.

For students who graduate the following Fall quarter or need to take an extra class as a post-back, do they indicate that they are taking a gap year?

Schools just want to know what you are doing if you are not in school during the year that you're applying. Most people who have to take courses in fall are still in school when they submit the secondary and may not know what they'll be doing in the new year so they can just skip that. If a school wants to ask at interview time, they certainly can.
