I would not wait until August to submit. Given your options, I would submit now and mention it in your secondaries. You could also add a line in passing in your personal statement (that will give your PS readers some idea without needing to create a section in the work/activities section).
 
I wouldn't wait until that late to submit since interview invites go out in a large wave in August. There are, of course, invites throughout the season but for the purposes of rolling admission schools, you should be submitting early. I wouldn't put your application on hold just because one more activity would help you with one school.

Secondaries will generally ask you about what you're doing in your gap year and that would be a good place to expound upon the AmeriCorps position. I personally find it unlikely that a single extra EC will change a school's decision to interview you from no to yes (unless, of course, you've just won the Nobel Prize), so it's not advantageous to wait.
 
Submit now. Don't jeopardize all of your app because of one school. I'm sure you'll get a secondary for CDU, and I doubt that adding the AmeriCorps (especially that early after starting) would change much.
 
So I'm pretty much ready to submit my primary app, but I'm having second thoughts about pulling the trigger right now. In August I start an AmeriCorps position at a homeless shelter for the next year and it's something I really want school's to know about. I don't think I should put it in my work and activities since I haven't really started and I don't want to wait until August to submit once I'm there. I wouldn't be verified until almost September and that's getting close to being late.

I originally had the plan to submit now and use it in my secondary apps. The thing is, I'm really wanting to go to Charles Drew and last years thread made it seem like maybe not everyone gets a secondary. My app has an underserved theme, but I thought the AmeriCorps addition would help (for all schools, not just CDU).

TL;DR: Should I go ahead and submit or wait until early-mid August when I actually start and can add it to my W&A?

Submit now. Sneak it into your application with an addendum at the end of a similar activity, a line at the end of the PS if you can spin it as part of your journey to medicine, or perhaps by adding it in Honors/Awards/Recognitions, using the date of acceptance, giving an idea of how selective the position is, and describing your expected role, hours, dates in the space.

If you try to enter it as a regular activity, the AMCAS program won't allow saving a future start date.
