Now I know pre-med students apply to med school through a wide variety of majors, but I'm planning out my undergrad and I'm finding I don't think I'll be able to complete all the material in in 4 years. I'm currently majoring in health and fitness which has a couple of the basic sciences, but I'm thinking about switching to cellular biology to consolidate my classes. With the amount of credits needed complete undergraduate studies, I wonder if it's worth spending all the extra time and money doing an unrelated major. Anyone else had this issue? If so, what is your advice?

You should be able to squeeze it in. Perhaps your school is different, though. I completed two unrelated majors and all pre-med requirements in four years with only 1 AP class and organic chem in the summer.
 
do what you enjoy, what you can finish on time, and what you can get good grades in.
 
I switched majors/minors twice and graduated in 5 years.

Started General Biology with no minors. Switched to German and Spanish double major after 1 semester of honors chem. Switched back to General Biology minoring in German, Spanish and Chemistry after 1 semester of no science.

I had no intention of going into medicine at the time, and 5 years was partially because it was hard to get my core major credits, so I just kept taking lots of fun classes.

Don't kill yourself in college. If you get into med school, med school'll do it for you. Have fun in college. That being said, I'm having WAY more fun in med school than college.
