I have to take minimum 5 classes per semester and I was thinking of adding a class. I am already taking

Organic chemistry+Lab- 4 credits
Biology Lab- 3 credits
Macro Econ- 3 credits
Theology- 3 credits
Philosophy- 3 credits

I got a 3.95 last semester taking the same work load and I was wondering whether it would be a good idea for me to add an extra class to my schedule. I will be adding a psychology class that is very intriguing and I've heard was easy from my good friend. Is it worth the risk or should I just stick to the schedule I have right now which will guarantee me a 3.8+.

Sure, do it. If you're not doing anything else knock yourself out.

If it doesn't contribute to your major at all, then you may also want to consider just using that time to pursue your extra curricular activities because you seem to be doing very well academically as it is. Doing well in the class can boost your GPA but it honestly doesn't seem like you need it that much.
