I am graduating this year, and plan to have a free year before i hopefully attend medical school. If I take some undergrad science classes through the school even after I graduate, will these class grades count towards my AMCAS gpa?

It depends on when you plan on taking these classes and submitting AMCAS. Theoretically you could wait until after you had grades for these classes if you took them over the summer before you submitted AMCAS. If you did this they would be included. However, if you wanted to submit AMCAS early (june) they probably wouldn't be included. Otherwise you would just put them under "future" or "current" courses. They wouldn't get processed by AMCAS...but you could always update schools throughout the application cycle once you get grades in those classes.
