Is it too late to take the MCAT July 19th and Submit my application late August? Does this put me at a significant disadvantage. GPA is somewhere between 3.7 and 3.8

I just took the MCAT last week but definitely felt unprepared for it (too much content and not enough practice). I had been scoring in the high 490s Kaplan beforehand, but am hoping after extensive practice tests, from NS, World, etc. , I will be able to get 515+.

I already have an MD acceptance at SUNY Upstate (through one of their early action programs) but want to apply to schools closer to my home in Florida and with better weather. Because of the conditions of my MD acceptance, I will forfeit it if I apply AMCAS, so I won't apply until I see my MCAT score and only if my score is at least 510.

Also, would it be OK if I take 2 pre-reqs (biochem and Physics 2) during senior year?

Don’t even worry about it. Take your SUNY acceptance and forget you ever asked.
