This semester I am planning on taking Statistics, Organic 2 w/lab, Nutrition, Technical Business Writing and a communications course together. Am I in over my head or does this sound like something I can get done with work?

That's about 16 credits, right? How have you been doing with that course load?

I see no big deal here.

I suggest you ask people who have already taken those courses at your school and see what that say in terms of time invested per week for these courses and go from there.

Each school's courses are different, so it's hard to make an assumption for you (plus, you know your capabilities better than anyone). For example, if you were at my undergrad, I'd consider not taking stats + orgo + nutrition all at once (I would suggest pick 2/3). Others would disagree based on their own experiences.

It really depends on how you feel about the classes. I'm taking O chem 2 with lab, Ecology, Enviro lit & film and Enviro history while also going to work full time. The science classes don't intimidate me one bit, however, the ENG and HIS classes I'm taking for L & HU credit worry me because they aren't my strong point. I know I'll survive, but it'll probably be a rough couple of months. lol

If you feel the classes will be tough, maybe omit one until next semester? Or take a class during summer if you are worried about falling behind? Personally, I think focusing more effort into less classes is more important than getting more classes done sooner.

I really don't see a big deal over those courses, but as others said, you know how well you do with things.

I had a semester where I took physics + physics lab, orgo + orgo lab, a bio course + bio lab, history, english, and calculus. It was a lot, but I managed it. Again, everyone is going to be different.

I think it all depends on what else you’re doing at the same time, what you’re used to, and what your talents are. For me? That would be too much now that I’m working about 25-30 hrs a week, and considering that science classes are HARD for me. But in full-time undergrad 10 years ago, with just a 5-hr-a-week TA job and no other major commitments, I wouldn’t have blinked an eye at taking that many history or language classes. (Orgo would still have given me pause...). If you’re a full-time student, good at science, and have the stamina to take on a full course load, you’ll probably be fine. Make sure those study skills are up to snuff, though, and all I will say with Orgo 2 is DON’T GET BEHIND!
