Taking time off post undergrad...MCAT when? Possible acceptance deferral?

I'm going to be a junior this fall, but after some clever maneuvering with my cello professor I'm completing another major. I'm supposed to be graduating in spring of 2012, however it's easier to take an extra semester and graduate December 2012. I was planning to take a year off between undergrad and med school anyway to reboot/work.

Since this is the case, should I still take my MCAT this coming January as a junior? Should I opt to take it later (as in my half of a "super senior year")? What's the best way to go about this?

I just wanted to know if I proceeded through the rest of the med school process (as if I were going to be attending med school in the fall of 2013) is it possible to defer an acceptance to the next year? Or do I just apply during my half-semester?
