With a 3.75 overall GPA, 505 MCAT (2nd attempt), 1500+ clinical hours & 300+ volunteer hours, should I add any out of state schools to my list? I obviously prefer to stay in Texas for the cheaper tuition, but are my stats good enough to apply ONLY to Texas schools?

It's not so much that your stats are good enough for TX, but rather that we all know that OOS matriculation (to MD schools) in your stats range is essentially non-detectable. Unlike TX schools, we are more likely to average your MCAT scores (or strongly consider previous scores), as well.
Last year, only 215 (out of 4,254) TX applicants matriculated OOS. If you are not recruitment material or did not attend a OOS undergrad, there is little reason to apply to OOS MD schools. TX has designed it this way...

Fwiw, I only got 3 IIs from Texas out of 15 IIs. Texas schools are big on numbers.
