I didn't do a whole lot. 100 hours volunteering at hospital. 40 hours volunteering at an after school program. 20 hours of shadowing a dpm. 2 years of research (1 was in education and another year involved the lower extremities.) I went to a foot and ankle conference.
I think regardless you should get involved in research it is an interesting experience.

During my interview at DMU they asked about my research.

in all honesty podiatry schools do not put much weight on extracurricular activities. If you have a good/decent gpa and MCAT score you will be fine.

But for my personal statement doing all the extracurricular activities, volunteering, and research gave me something to write about.
