too late to add more school

I just finished my DAT couple days ago: TS20/AA19/PAT20. while having to work full time.

Science GPA 4.0; Total GPA 3.68

Already apply 8 school at the begining of the cycle, if I want to add more schools now, is it too late?

Not too late for many schools, go for it. Even with your stats, 8 is a few less than I'd like to think would be safe, just to give you some variety, and no sense cutting the nose to spite the face. Though some schools it might be too late, I know UCSF has a deadline every year of October 15th, so you wouldn't be able to get that one in time.

Pitt on the other hand, hasn't even started looking at apps yet.

there is about 10 schools or so that do decent amount of post Dec interviews, you should look for that. Your app will be available on line immediately to new schools and you can send unofficial DAT report to every school to speed up the process.
OTOH if you choose carefully first time 8 schools should do it with your grades.
