I'm an intern in a different field and applied for Psych previously. Is it too late now to start eras, re-upload all my old letters info and send the app out now?

No it's not too late, but your PS and at least a couple of letters ought to reflect your mindset in switching fields. I'd say that a definite red flag for us is someone with "stale" letters, especially if they're generic ("will do fine in whatever residency they enter") or targeted toward a different specialty.
And one letter needs to be from your current PD, too, indicating that you're in good standing.
