Not sure. But your required Writing I and Writing II courses should be fine.
 
Does anyone else have experience with those two classes?

I passed out of writing 1, so even if I do writing 2, I am still a couple classes short, hence my question.

No they don't count because they are not writing intensive. I've taken them both and passed out of English comp 3 (writing 1) and I still had to take an additional two english classes along with a writing 2.

So if I passed out of Eng Comp 3, that already fulfills 1 out of the 3 "eng" classes I need as part of my 1 year of english?

It really depends on the schools you are applying to. Some do not accept any APs (ex. UCLA's DGSOM) so you would need to take 3 full quarters. Some accept only certain APs so that might get you out of 1/3 for that school. I decided to be safe and took 3.
