Update letters are a common phenomenon. It is usually done after the fall semester is over, but you're not a student, and considering that your application will be severely handicapped by the sparsity of your clinical experience, I encourage you to send a brief letter to each school advising them of your current activites now. I would send them again with specific mention of accumulated hours in early December and perhaps mid-February with the hope that the information will sway adcomms positively. Definitely continue these activites through the entire application year, so that if all else fails, you will be well positioned for the next application season.
