Is it possible to do this? I have 2 others, 1 science and 1 nonscience, but my other science professor is acting very flaky about writing letters(he simply has not responded to anyone I know of, after implying he would write us letters).

Could I get away with using a letter from my PI? I worked in his lab for 1.5+ years and technically he IS science faculty at my university..

Your PI LOR will work for some med schools, but you'll have to read the wording of the LOR requirements carefully. Some specify science faculty, in which case you're fine. Others request "Science faculty who taught you". For the latter, some schools might be willing to substitute their requirement with the PI letter if you call or petition.
