ok, I can't remember which is which. Anyone out there have an easy way to remember which is valgus, and which is varus?

I think of a cursive lowercase l for valgus and your legs take that same sort of inward angel. And for varus I just think of a u which starts loser to gether (the feet) and widens out (the knees).

May not be the best way but, worked for me.
