Going by this page, it says that the LOR types that are required are employer, health care professional, and science professor. Does that mean that one must be an employer, one must be health care professional, and one must be a science professor?

Or does it mean that they accept any 3 letters as long as the one of the three types required?

It's generally better to have a wide range of references. Outside of a letter of intent (often not required by schools) there isn't a better opportunity for the school to learn about you.
