From some searching, I see that AMCAS applications ask for the average number of hours per week and the length of weeks worked (if I understand correctly). How would one incorporate multiple single-instance volunteer events?
 
AMCAS asks start date (month/year) and end date (month/year) and average hours per week.

You could list start date & end date and leave hours per week blank and then detail in the description section:

Local marathon water station volunteer: description of duties, date, x hours.
Local soup kitchen Thanksgiving dinner: description of duties, date, x hours
Annual charity event, description of duties, date, x hours
Campus blood drive organizer, duties, date, hours

I'm not an adcom, but if you want to do them, what's the problem? You can't live your life doing things based on how they will be viewed by others.
 
You need not list everything you've ever done on the AMCAS. Do the things you want to do without worrying about how they will look on your application. If you have a lot of "one day" activities as well as some long term activities you can list just the long term things on the application or you can group the one-day activities in one box and dedicate the other 14 boxes to your long term activities.
